A pair of Minneapolis-based coffee businesses are expected to add to the aroma of FairWave Collective, said Dan Trott, emphasizing the company’s mission to elevate quality coffee experiences through specialty brands.
Folly Coffee Roasters and Philtera Cold Brewed Coffees are the latest Minnesota additions to the Kansas City-based collective’s roast, joining Up Coffee Roasters, which FairWave acquired in August 2022. Fellow Minneapolis-made brand Spyhouse Coffee Roasters entered the collective in 2021.
“As our presence grows in Minneapolis and into additional new markets, we continue to be driven by the same purpose: to preserve and elevate local specialty coffee brands through best practices, innovation and authentic coffee experiences,” said Trott, co-founder of FairWave.

With FairWave, Folly will become a full-service partner to cafes and restaurants, offering allied, paper, and other ancillary products and services to its customers.
Bathe will join the FairWave team as the vice president of sales and business development for FairWave Minnesota. Jeff Mooney, head roaster at Folly, will join the FairWave team as director of coffee for FairWave Minnesota.
The company will continue to operate locally in Minneapolis. Through this acquisition, Folly Coffee Roasters will have access to FairWave’s marketing and technology resources and best practices from other brands in the collective.

Philtera, co-founded by Bathe and Brandon Martin, was founded in September 2018. It offers wholesale cold brew exclusively on tap to cafes and restaurants throughout the Twin Cities. Folly and Philtera have grown substantially in the restaurant segment, becoming the coffee of choice for some of Minneapolis-St. Paul’s favorite eateries.
